Peach - Strawberry Cake - Yum....
This cake is simple, delicious and works with only peaches if you don't have strawberries on hand (although both can easily be frozen so you always do)
The applesauce is in lieu of oil - if you don't have applesauce you can use oil...but who wants all those calories?
Ingredients
3 cups all purpose flower
1 tablespoon cinnamon
1 teaspoon salt
1 teasspoon baking soda
1 1/4 cups apple sauce
3 eggs slightly beaten
2 cups white sugar
2 cups chopped peaches (no skin)
1-2 cups of chopped strawberries
Preheat oven to 35
mix dry ingredients in one bowl and applesauce, eggs and sugar in another - stir wet mix into dry until moist. fold in peaches & strawberries and fill prepared pan.
I used a 9 x 9 - took about 65 minutes
I would think a flute pan or 9 x 11 would take 45 min
either way check after 40 minutes when knife inserted comes out clean
For cupcakes - use 400 degree oven and bake for 25 minutes or until a toothpick comes out clean
